White Charcoal Binchotan

White Charcoal (Binchotan)

White charcoal is produced by pyrolyzing hardwood in a kiln at about 240°C (464°F) for 120 hours, then increasing the temperature to around 1,000°C (1,830°F). After carbonization, the charcoal is removed and covered with a mixture of earth, sand, and ash. Binchō-tan is a type of hardwood charcoal that maintains the natural shape of the wood. It is harder and denser than regular black charcoal and produces a metallic sound when tapped. Due to its physical structure, binchōtan has a whiter or metallic appearance and is not only used for cooking but is also known for its ability to absorb odors.
